Here’s my weekly “lunchpiration” post in which I share what I packed for my kindergartener’s lunch for the previous week. As a reminder, the lunches have to:
This week also had the extra requirement of not containing anything too hard to bite into because one of Charles’ top incisors was extra wobbly (and ultimately fell out)
And now, without further ado, here are the lunches I packed for my lovely 6 year old last week.
Snack: Plain Greek yogurt with maple syrup and mini chocolate chips. Lunch: Mini pizzas on whole grain toast squares, broccoli with ranch dip, slices of tomato and dill pickles, dried apricots and a chocolate-dipped icebox cookie.Snack: sharp cheddar cheese strips and a sliced apple. Lunch: Leftover brown lentil tacos with pickled red cabbage, shredded sharp cheddar, diced tomato and avocado slices. Chocolate-dipped icebox cookie for dessert.Snack: Plain Greek yogurt (flavoured with vanilla extract and sweetened with maple syrup) with decorative sprinkles. Lunch: chickpea salad with ranch dressing, sliced beef roast, carrot rounds, shaped cheddar and mozzarella cheese, pink grapefruit and raisins.Snack: plain Greek yogurt (flavoured with vanilla extract and sweetened with maple syrup) with unsweetened coconut and raisins. Lunch: leftover homemade rotolo bolognese and a mini vanilla cupcake for dessert.Snack: slice of homemade carrot bread. Lunch: leftover shepard’s pie with a mini vanilla cupcake for dessert.

Wow these are great! My boys get turkey and cheese or pb and j most days so these are some great ideas to mix it up. Did you make the chocolate dipped ice box cookie?
To be honest, they are more diverse than mine used to be. I just hope that I can keep it up once I go back to work.
The lentil tacos were a surprise. I usually make them with black beans but forgot to buy them so I improvised and used what I had on hand. I’ll try to whip up a post for them!

I grew up on PB&J and still like them lol. Yes, I did make the icebox cookies from scratch.
