Toasted Sesame Granola {Recipe}

Hello everyone!

I don’t know if you’ve noticed, but as diverse as I try to be in making Charles’ lunches, homemade granola is one element that comes up rather often.  And with good reason!  It is quick and easy to make.  We’ve also found it cheaper than its ready-made counterpart and, best of all, it’s fully customizable!  Another positive aspect is that since we purchase all of the ingredients in bulk bins, making it keeps us in line with our zero-waste journey.

And seriously, granola goes well with so many things!  Want to eat yogurt?  Sprinkle some granola on top!  Going for a small bowl of ice cream?  Don’t forget the granola!  Cottage cheese for your snack?  Granola!  Smoothie bowl?  Mmmmm….smoothie bowl with granola *drools*.

Can I let you in on a little secret?  Sometimes I even get carried away and just eat it with milk.  I’ve even been know to sneak handfuls of it straight out of the container.

Now, back to the recipe.  I’ve made granola quite a few times now and, after fiddling around with quantities and ingredients, have finally found a winner (for me at least).  If you enjoy the taste of toasted sesame and honey, you’re probably going to like it too.

Toasted sesame granola

(Makes 1.9L \ 2 Quarts)

Ingredients

  • 4 cups old fashioned oats (not instant)
  • 1/2 cup shredded coconut, unsweetened
  • 1/2 cup sesame seeds, raw
  • 1/2 cup pumpkin seeds
  • 1/2 cup almonds, chopped
  • 2 Tbsp. chia seeds
  • 1 Tbsp. coconut oil
  • 1 Tbsp. cinnamon, ground
  • 1/2 tsp. salt
  • 1/2 cup golden honey
  • 1/4 cup maple syrup
  • 1/2 cup chocolate chips
  • 1/2 cup dried cranberries

Directions

  1. Preheat oven to 300F and line a large cookie sheet with a silicone mat (or parchment paper).
  2. In a skillet, toast sesame seeds and coconut, stirring often until golden brown and fragrant.
  3. In a large mixing bowl, combine oats, coconut, sesame seeds, pumpkin seeds, almonds and chia seeds.  Add the coconut oil, cinnamon and salt and stir until well combined (I usually use my hands because I can make sure there aren’t any chunks of coconut oil left).  Pour in the honey and maple syrup and stir again until the granola starts to come together.
  4. Pour the mix onto the prepared cookie sheet, spreading the mixture evenly and pop into the oven for about 30 minutes (it should be golden brown when it’s done).  Let rest until cooled.
  5. Break up the granola, add the chocolate chips and cranberries and mix well.  Using the mat or parchment paper, lift up the granola to pour into your container of choice.
